Serves: 6-8

  • 4 lbs (or 4-5 heads) broccoli, cut into about 8 cups of florets and diced stem
  • 1 head garlic, sliced
  • 1/4 cup extra virgin olive oil
  • 1 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 large lemon:
    • 2 tsp lemon zest
    • 2 tbsp fresh lemon juice
  • 1/2 cup Parmesan cheese, grated
  • Optional Garnish
    • 1/4 cup sunflower seeds or pine nuts
    • 1/4 cup raisins or dried currants

Method of Preparation:

  1. Preheat oven to 400°F.
  2. In a large mixing bowl, add broccoli, garlic, 3/4 of the oil, salt, and pepper. Toss to coat.
  3. Transfer broccoli to a parchment paper lined baking sheet. Roast for 20-25 minutes, until the center of the broccoli is tender and some of the tips have become crispy.
  4. Remove from oven and add the remaining oil, lemon zest, lemon juice, and cheese. Stir to mix.
  5. Serve hot!
