MUIH offers one of the few integrative Doctor of Clinical Nutrition programs in the U.S. This program integrates a systems biology and research approach with contemporary perspectives in functional nutrition and a functional medicine approach. It develops compassionate, skillful, and creative practitioners capable of working collaboratively to support individuals and groups with personalized plans that promote health. Graduates are prepared to work as part of multidisciplinary teams in a variety of health and wellness and conventional medical settings. The program uses a cohort model to maximize peer to peer support, engagement, and professional networking.

MUIH’s program is one of only two master’s degree programs in clinical nutrition in the U.S. to hold accreditation by the Accreditation Council on Nutrition Professional Education (ACNPE). This program integrates traditional systems and nature-based knowledge of food and health with contemporary biochemical and physiological perspectives of the complex role of nutrition in human health, to provide personalized evidence-based interventions and educational programs. Students gain practical skills and apply theory through participation in whole foods cooking labs, practice coaching sessions, case studies, and biochemical assessments. Students can select one of two areas of concentration – herbal medicine or human clinical nutrition. Graduates may be eligible to seek multiple professional credentials: Certified Nutrition Specialist (CNS) from the Board for Certification of Nutrition Specialists (BCNS), Certified Clinical Nutritionist (CCN) from the Clinical Nutrition Certification Board (CNCB), and Certified in Holistic Nutrition by the Holistic Nutrition Credentialing Board.

MUIH offers the only Post-Master’s Certificate in Nutrition and Integrative Health in the U.S. This program provides evidence-based nutrition training specifically for health professionals and those with advanced science training. It integrates a biochemical and molecular understanding of nutrition into a broader context of whole food healing and whole person health and wellness care. Graduates may be eligible to seek the professional Certified Nutrition Specialist (CNS) credential from the Board for Certification of Nutrition Specialists (BCNS).

MUIH’s program is one of only two graduate programs in the U.S. to focus on the emerging field of culinary health/medicine. It blends the nutrition and culinary fields, prepares students with the scientifically based principles and practices of whole foods selection and preparation as a foundation for health and wellness, celebrates global cuisine and explores multicultural and culturally specific meal plans, and explores the role of culinary educator in promoting healthy diets and partnering with clients and healthcare practitioners.
