Ingredients:
- 4 lbs (or 4-5 heads) broccoli, cut into about 8 cups of florets and diced stem
- 1 head garlic, sliced
- 1/4 cup extra virgin olive oil
- 1 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1 large lemon:
- 2 tsp lemon zest
- 2 tbsp fresh lemon juice
- 1/2 cup Parmesan cheese, grated
- Optional Garnish
- 1/4 cup sunflower seeds or pine nuts
- 1/4 cup raisins or dried currants
Method of Preparation:
- Preheat oven to 400°F.
- In a large mixing bowl, add broccoli, garlic, 3/4 of the oil, salt, and pepper. Toss to coat.
- Transfer broccoli to a parchment paper lined baking sheet. Roast for 20-25 minutes, until the center of the broccoli is tender and some of the tips have become crispy.
- Remove from oven and add the remaining oil, lemon zest, lemon juice, and cheese. Stir to mix.
- Serve hot!
