Ingredients:
- 1 cup brown rice
- 4 cups vegetable broth (or water)
- 2 tbsp olive oil
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms (fresh or canned), sliced
- 1 cup peas (frozen or canned)
- 1/2 cup grated cheese of choice
- Salt & black pepper, to taste
- Fresh parsley, chopped (optional)
Method of Preparation:
- In a large skillet, heat 1 tablespoon of olive oil and
1 tablespoon of butter over medium heat. Add the
chopped onion and a pinch of salt and cook 3-5
minutes or until softened. - Add the minced garlic and sliced mushrooms.
Sauté 5-7 minutes or until the mushrooms are
tender. - Stir in the peas and cook 2-3 minutes until they
are heated through. - Once the brown rice is cooked, add it to the
skillet with the vegetables, stirring to combine. - Stir in the grated cheese and remaining butter.
Season with salt and black pepper to taste. - Garnish with fresh parsley and serve in bowls.
