Equipment: Medium saucepan, Large skillet, Stirring spoon, Knife, Cutting board, Cheese grater (optional)

Ingredients:

  • 1 cup brown rice
  • 4 cups vegetable broth (or water)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms (fresh or canned), sliced
  • 1 cup peas (frozen or canned)
  • 1/2 cup grated cheese of choice
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (optional)

Method of Preparation:

  1. In a large skillet, heat 1 tablespoon of olive oil and
    1 tablespoon of butter over medium heat. Add the
    chopped onion and a pinch of salt and cook 3-5
    minutes or until softened.
  2. Add the minced garlic and sliced mushrooms.
    Sauté 5-7 minutes or until the mushrooms are
    tender.
  3. Stir in the peas and cook 2-3 minutes until they
    are heated through.
  4. Once the brown rice is cooked, add it to the
    skillet with the vegetables, stirring to combine.
  5. Stir in the grated cheese and remaining butter.
    Season with salt and black pepper to taste.
  6. Garnish with fresh parsley and serve in bowls.
  7. Enjoy!
